[email protected] Mandarin CakeServes: 10-12Ingredients300g almond milk350g castor sugar1 tsp baking powder6 eggs, beaten6 small mandarinsMethod1. Place mandarins (with skin on) in a large pot of cold water and boil for 90 minutes. 2. In a separate bowl, mix together almond meal, castor sugar, baking powder and eggs.3. Take mandarins out of water and allow to cool. Cut mandarins in half and remove all the seeds. Then puree mandarins in a blender (including the skin), and add this puree to the mixture.4. Line the bottom of a large spring baking tin (siz e12) and cook for 45-50 minutes at 180 degrees Celsius.5. Option to dust with iceing sugar and decorate with seasonal fruit to serve.
